Does anyone know of any curriculum/activities already developed around the Age of Exploration, plant hunting, Captain Cook or Sir Joseph Banks??

That will take you to the National Gardening Association's gardening with kids website. They have a newsletter that is available with membership. I have seen articles of the type you are mentioning in older issues. They may be able to help you.
