vegetables for fall and winter

I've never tried to grow veggies over the winter, but recently read Eliot Coleman's book on Four-Season Harvest and thought I'd give it a try. I understand from his book that most plants don't really grow during the winter, but if they've matured in the fall, you can harvest most of the winter. Not sure how that really works, but I'm willing to try! :- )

So - I thought I might start first with veggies that don't need protection in TN. Maybe mache/corn salad? Carrots and parsnips that have been planted in August or so and left in the ground? Spinach? I'm just not sure about row covers and having to vent and how I'd be able to access veggies in the winter without having the row covers blow away in the wind...

Anyone know which of these plants (or others) will make it through winter here without row covers?
