No, the age of the seeds has nothing at all to do with the flavor or color. The only thing age will do is decrease germination rate.

It could be all the hot dry weather we've had...maybe.

I agree brandon7, age of seed, how it's stored, only will effect germination rate. It won't make "bad veggies."

Thanks to you both. Hot and dry seem such inadequate adjectives for our Tennessee weather! I'm doing rain dances and praying for some relief. Meanwhile I'm adding lots of garlic to the okra!
