I want to plant a fall garden

I now have some nice clean raised beds that I am going to pull squash, cukes and bean plants out of as they are done for this summer.

Now I would love to plant something in their place for a fall garden.

What should I plant and when should I plant it?

This question has come up quite a few times before. The attached publication from the UT Extension Service list many fall vegetables with planting times. See attached.
