Are my transplants in trouble? Curling leaves, yellow-ish.

I put these in the ground three days ago, and the leaves are curling a bit (more on some than others), and yellowing. Different plants have varying degrees of it (my Speckled Roman pictured below has it worst, others are less severe).

I planted them in a mix of Kellogg's garden soil and compost, with 4 tablespoons of EB Stone Tomato Food mixed in. They are in a raised bed. They got a gallon of water when they went in the ground, and have gotten a quart a day since (I am planning to dramatically reduce the watering frequency after a week). The day after they went in, it got super hot- about 90 degrees, then 80 the next day, and now it's back to the low-70s.

I'm fearful of Yellow Leaf Curl. But they just went in the ground. Am I overwatering? Transplant shock? Am I being a baby, or is all lost?

I'd love any advice from the forum. Thanks!
