Roots forming on stems

I was in the nursery section of a local big-box store, that never takes good care of their plants, when I noticed some tomato plants with masses of little roots forming on the stems of many of their tomato plants, and I chuckled to myself, thinking that they probably crammed the plants too close together which somehow caused it. I laughed on the other side of my face when one of my plants began to exhibit the same behaviour! I's a Sun Gold (hybrid) which I bought.as a plant from our local market.

Does anyone have an explanation? Is it certain varieties that do this or is it cultural practise that causes it?
