| This is my first year growing tomatoes. They are starting to ripen. Some are very ripe. I intend to can tomato sauce with them. This probably sounds odd, but I'm not much for fresh tomatoes. Can I go ahead and peel/deseed them then freeze them until I have enough ripe to make sauce? Or will this diminish the flavor? Sorry if I've posted this in the wrong place. Of all the forums on this site, I couldn't find one dedicated to canning/preserving. |

| The forum you're looking for is called the "Harvest" forum. But I've often frozen tomatoes and used them later for soup, etc. I think you'd be fine. :) |

| I freeze my excess tomatoes (even those "dreaded" Yellow Pears!) The only reason I de-seed any is to save the seed. I store them in plastic bags in the freezer, then, when I need them for stews/soups, I run each tomato under the hot tap and the skin splits and is easy to remove, then I toss them in. Easy Peasy! Hope this helps. |

But I would rather boil it a little and keep it in a sealed glass container in the frig. Another way, after peeling deseeding, is to filter through a tight bag(much tighter than cheese cloth). Use the juice as beverage and save the paste/sauce in a zipper bag in frig. |
