Pick or not, what to do?

Our June vacation during green tomato season was postponed and is now an August vacation starting tomorrow with a garden full of ripe tomatoes. They are Viva paste tomatoes, bright red and firm. Can they stay on the vine for another week? If I pick them now will they keep in a cool basement for a week until I can them? Any tips or suggestions for either approach? I have 18 plants!

If you are going to use them for paste/sauce, you can store them in refrigerator, freezer, in basement, in your kitchen ..
A week's time is not that long. Just try to spread them on towels, in baskets so that they are aired.

Just try not to bruise them while picking and handling. ALSO, DO NOT WASH THEM.

On top of my above comment, I would harvest any and all that have turned blush and keep them in the kitchen, out of direct sun.

I agree with seysonn. If you leave them on the vine they could certainly "go over" in a week.

Assuming you plan to use them to make sauce - otherwise why grow that type/variety - then just pick and freeze whole until ready to process them.

That's standard practice with most home canner folks. I sure wouldn't leave them on the plants to go to waste.
