| Do you remove the skins? The tomatoes I am getting right now have tough skins and I don't think that would be good in dried tomatoes - or will they be acceptable after drying? |

| I never skin them - the taste and texture of the dried skin is exactly that of the dried fruit - leathery and delicious! That's my experience anyhoo. |

| Leave the skins, but removing seeds is an option. |
