When drying tomatoes --

Do you remove the skins? The tomatoes I am getting right now have tough skins and I don't think that would be good in dried tomatoes - or will they be acceptable after drying?

I never skin them - the taste and texture of the dried skin is exactly that of the dried fruit - leathery and delicious!

That's my experience anyhoo.

Leave the skins, but removing seeds is an option.

Trying to dry them without the skins would be messy to say the least.
