Has the weather been really hot while the tomatoes were ripening? I've heard that can cause the white areas inside tomatoes.

Uneven ripening has several possible causes but weather factors is probably the most common. Excessive heat or unusual cool night temps, excess or inconsistent soil moisture, compacted soil, root stunting, low soil potassium, etc. Basically anything that interferes with normal distribution of nutrients throughout the fruit as it is developing.

PS: In the previous discussions here about this question many of us suggest you try picking the tomatoes after they reach breaker stage and allowing them to ripen indoors out of the sun and heat.

Appreciate the input. My tomatoes are in raised beds. 1 tomatoe per bed, at the back and tied to a wire trellis. We have not had a very hot summer but it has been a very rainy summer. We also drip in the bed as needed. So hard to see why one would ripen wonderfully and another not.

Even ripening is a genetic trait. In some hybrid varieties it plays a more dominant role.
