what i do at the end of the year is put my tomatoes in flat boxes with some ripe ones. then the green ones ripen. just keep taken them out as they ripen. if you dont have any ripe ones or part ripe you can put some bananas with them.

If you are into canning there are all sorts of recipes for using green tomatoes. Also several recipes that can be frozen if not into canning.

Otherwise the box method in a cool dark place works well. I personally prefer to wrap them individually in newspaper in the box and let them ripen naturally rather than using the ethylene method (the one using ripe fruit). The flavor develops better with natural ripening and we often have ripened tomatoes to eat through Thanksgiving.

Dave, how do you tell when they have ripened when wrapped in newspaper individually. I want to pick some greens at the end of the season and do this so I have some tomatoes to go through late fall, but if I wapeed say 50 individual tomatoes, how would I check other than to unrwap and re-wrap them every few days? Seems like it could be time consuming. Or can you just give them a light squeeze through the paper and tell by the softness?

Yeah you have to partly unwrap a few once a week to check. Just depends on how you wrap them how difficult it is to check. Only takes a couple of minutes if you leave a triangular newspaper flap on top. Upside down so when you peek you are looking at blossom end.

Once one begins to show color take it out of the box and move it to the kitchen counter to finish.

I put my green tomatoes in newspaper lined flats. These are covered with another layer of newspaper. I just lift the paper to check. In my case the newspaper provides some insulation and absorbs fluids from bad spots that I have missed.

Thanks for all the replys. I put them into a box as suggested and covered the entire box with newspapers and checked daily. I am happy to report that most are already various stages of red. Looks like they will all ripen and a lot sooner than I thought. Thanks again...this is a great forum.
