Weird Tomato Texture Color

Hi all,

I planted a number of heirloom tomato plants this year. Earlier in the summer I had great success but the last couple of weeks all the tomatoes I pick regardless of variety have this weird interior. It's whitish, spongy, a little crystallized looking, hard to describe. It's just weird and I can't use them. I'm attaching a couple pictures close up but they aren't great. There doesn't seem to be any outside damage so I don't think it's stinkbug. Any ideas?

How does the crystallized stuff taste ? Sweet ? Sour?

Crystallization occurs as a result cooling of a rich solution.
That is, for example, how rock candy is made.

I have seen a little of that before on grocery store purchased tomatoes - but I dont know what causes it. I would think they would be fine for sauce.

This is calllus tissue which represents undifferentiated and immature cells . I am not sure of the conditions that favor this in a garden environment. In the laboratory, one produce callus tissue by manipulating nutrients and phytochemicals in growth media for the purpose of micropropagation and breeding experiments.
