Tip Cuttings on Dying Plants?

It's getting cold out at night, and my tomato plants are dying as a result. The top few inches of my Mr. Stripey is very healthy, though, so I'm wondering the best way to take that part and root it so I can grow it over the winter.

Also, is it normal for plants to die from the bottom up like Mr. Stripey has? I've never seen it before.
