How to prevent watery tomatoes?

I am using a container mix that is 55% pine bark fines so it is fast draining. It is still pretty hot here, for instance today's high was 90 and low was 74, so I water every day to keep the soil consistently moist.

I am having blossom drop, no doubt due to the temperature and I want to be sure I don't exacerbate the problem by underwatering. But I worry about having watery tomatoes, too.

Given the temperature using fast draining soil, is it possible to over water to begin with? The water seems to flow out of the container and then evaporate pretty quickly.
