Opalkas & what else?????????

I will have Opalkas again but would like to find some other pastes to try, am leaning toward Amish paste &one other, what does anybody suggest? Would like one fairly large and sweet??

In your thread of yesterday about Opalka and San Marzano you did ask for other paste varieties and I listed:

Heidi
Mama Leone
Martino's Roma

......and those are on the small side b'c you hadn't said you wanted larger ones.

So I'll add
Sarnowski Polish Plum
Ludmilla's Red Plum

.....which are much larger.

But I'd also add almost any heart variety since they are very meaty with few seeds akin to paste varieties, larger, and have excellent taste.

There are several threads here about heart varieties which you can find with the search feature at the bottom of this first page, or I can list some if you wish.

My own preference for sauces with great taste would be to use heart varieties.

I grew Amish Paste here in SE Iowa, and was not impressed. Yield was low and they were not very fleshy.

I am totally hooked on Opalkas though.

Large and sweet== grow more opalkas!!!
La Roma VFTT by tomato growers is great for grilling, not as big as opalka but more productive, not as sweet either but they are very, very firm and hold up to grilling.

A sweet paste? They don't exist. I've not found Olpaka to be sweet.

See, greenmulberry was not impressed with Amish Paste, low yield.
My Amish Paste had tons of tomatoes and sweet, but not overly sweet.
I really liked it, and plan to grow it next year. They say it's too juicy
for a paste, and I guess that's true. Like Carolyn said, taste is subjective.
By the the way Carolyn, bought your book. You show real tomato
pictures. Good book.. .. Docox, I finally received Opalka's as an extra in a
trade, really look forward to growing these next year. Every year I
experiment with different varieties, and there are keepers and losers, and
try again tomatoes.

If you aren't one of those who refuses to grow hybrids, you might try Big Mamas. They are very good for sauce and salsa. I still like the Opalkas best though.
