Best tomatoes for drying?

My wife drys quite a few tomatoes for winter salads. Some tomatoes seem to have a good, strong tomato flavor that survives the drying process. Others come through pretty wimpy.

Any favorites for flavor from the dehydrator?

Principe Borghese is a nice choice.

Question comes up often over on the Harvest Forum here and many of the cherry varieties seem quite popular for drying - especially Sun Gold and Black Cherry. Also often mentioned is plum varieties like Mama Leone.

I found that Red Grape is excellent for drying. When eaten fresh, the flavor is nothing to write home about, but when dried, the flavor is very intense and good.

There is a gardenwebber who has a business growing, drying, and selling tomatoes. I've seen her post here somewhere. I think she is from Utah or Idaho.

I have looked for her post where she named her favorite, but, of course, I can't find it. Sorry. I'm just not good at finding old posts. There are some people here who seem like wizzards to me because they can find any old post from anywhere!

I know what GardenWebber you're talking about. It was her post that got me started growing tomatoes and now I find myself needing some kind of help, as in GardenWebbers Anonymous! I bought seeds to every tomato she suggested except the Chinese Giant because I couldn't find it at the time.

Here's the post:

Here is a link that might be useful: Sun Dried Tomatoes

I had trouble finding some of the varieties because the spelling on a few was different. Here are the links to the ones I bought:

Personally I wasn't able to make my own decision on these because of the lousy tomato year this last year. I will try them all again this year. I'm such a newbie with tomatoes that it will take me a while to truly evaluate them.

I had eight different toms and dried fruit from all of them. They are all wonderful. After I dried them, I froze them in a zip lock bag and eat them like candy.

When I make salad dressing, I rehydrate them in lemon juice overnight in the fridge and then put them in a food processor with garlic, s/p and canola oil. I like canola oil because it doesn't solidify in the fridge like olive oil does.
