What's eating my ripe tomatoes?

My tomato and pepper plants have been doing FABulous - until they ripen, then something is eating them. Whatever it is isn't eating the leaves or anything else. Just the fruit when it's ripe so far. I have been using an insecticidal soap and they have done great until like I said, it's time to pick them. I inspect my plants every morning and every evening and have not seen any bugs. Then yesterday I was checking the one tomato that was looking ripe to see if it was ready to pick and I saw two tiny holes and what looked like tiny ants or mites. I got my insecticidal soap and sprayed them. This morning I went out to check it and it looks like someone took a big bite out of it. Any ideas what it oculd be and what I can do to stop them?
