Outdoor Topiaries for heavy clay soil?

I am interested in trying out topiary designs outdoors. I have ammended my flowerbeds, but not the yard. I love fragrant plants, but am willing to try anything that can make it through our summers. We have 100F temps about 30 days a year. Little summer rain May-Sept. but lots from Nov-April. We only freeze about 5 days per year. I welcome all suggestions!

I have planted rosemary in our local cemetary and one grew to over 4' until I decided to move it and it did not survive. Another one is going strong. Rosemary does not like soggy feet but clay can be a good thing with our heat:)
