dog shaped topiary

Hi
This is new to me but I just stumbled across a topiary of a jack russell, like my dog.
Now I am researching what I do with this.
It can be purchased with or with out the moss.
If I purchase it with moss in it, what do I plant in it that will make it green but not lose the shape of the dog.
Or (this will show you how new to this I am) does the moss itself "grow" and turn green?
