Portulacaria (Elephant Food)?

I'd like to try a deer topiary. My mother has a large deer that you use at Christmas and the lights no longer work. I'm thinking of putting chicken wire on it. Cover it with moss and fill will soil. Put small pieces of Portulacaria (Elephant Food) in and as it grows pin it to cover. Has anyone tried this plant for topiary? I live in Mesa, AZ and its hard to find things that will take our heat and full sun.
This one I know does good here and will root very easy.
