Newbie wanting 'Secret Garden' entrance

I want to make an outdoor topiary in a shape similar to a flat-topped arbor. I want to be able to walk through it. It will get morning sun and partial shade in the afternoons. I was thinking of using wax-leaf privet, but need advice. Any other plant suggestions?

If I use the privet, I don't know whether to trim into shape as they grow. Any advice would be appreciated. Thanks.
