I would like to train a series of sprial forms in what is a fairly formal garden. Do I have any choices other than junipers? Thanks..

cedars or thuja can be spiralled. I'm presentally doing one. I also suppose in your climate that you can successfully grow bay trees outdoors and they can be spiralled. What else? A tall growing yew if you can get these.

One other, hollies which remain evergreen.
