beautiful gardens in the Languedoc?

I'm very interested in the history of the Cathars in southern France, and am thinking of visiting the Languedoc and nearby areas next September.

So far, I've interested a friend who would indulge my interest but is far more keen to see some beautiful gardens around there. So could anyone advise us on getting information on how to do both. So far the places we're thinking of are: Carcassonne, Pau, Toulouse and Mirepoix.

Any information and/or advice would be seized on gratefully.

I lived in Montpellier in my college days and loved the area. Wasn't as interested in gardens then, so can't recall specific gardens. If you go as far east as Montpellier do go to the botanic gardens there - one of the oldest in the world - associated with the medical school there. When I was there in the 1980s it was in fair condition.

I really loved Carcassone and you will like the region a lot.
