Mango tree grafting

Iôm an amateur in gardening living in the Dominican Republic. We have a huge Mango tree in our yard which gives us thousands of extremely delicious mangos evry year. I grew a seed and read about grafting then ordered the kit which has the special knife, the two types of tapes etc so now Iôm ready to try. The trouble is the seed I planted grew up to about one foot then divided into two. One branch is now about 3 feet high and the other is much smaller. Should I chop of the smaller branch and allow the injury to heal before attempting the graft or can I graft and chop at the same time. Is there a better time of the day for grafting? Does the moon have any influence? Since Iôm a beginner any tips would be appreciated. I tried attaching a photo. How do I ID my type of Mango?
