heliconia sharonii question

Hello,
I purchased four Heliconia sharonii stalks(?) in mid-March and have been soaking them in water since then. I was directed to soak them until the roots grew to about 2 inches, at which time I should then plant them in Pro Jungle Growth potting mix. Over the last two weeks I've planted two of them, the other two are still soaking. I noticed this morning that one of the potted plants has new growth coming up - so exciting!

My question is, do you know if I'm supposed to cut off the top of the original stalk and If so, when?

After reading about these on GW, I think I'm going to keep them in containers. They seem very happy in my husband's grilling shed.
