I'm in NY and every fall I must dig and store the bulb for winter, that is when I split it and give away the baby bulbs. If I were you, I'd wait til end of summer to separate. Hope that helps, others may have more advice.

I have few elephant ear, which are alocasia brisbanensis, alocasia macrorhiza, colocasia esculenta amazon queen. All of them are quite invasive in my garden especially during the warmer months. I seperated the young one in autumn when the had cooled down (I threw most of them away). Normally, I seperate the runners, which has roots already. The other day I cut the large bulb into pieces. there were many eyes on it and I left them on the soil. I kept the soil moist, but not wet. After 5 weeks, the roots were forming.
