Keeping alive in colder zones?

I figured this is the place to ask since many of us colder zone people have warm zone envy.

I'm in 7b and I have brugs, a sweet olive, some seedlings, things like that that I'd like to keep outside for the winter. Is straw the way to go?

Plant them in the ground, mulch, then pile hay on it with a cover over it? What kind of cover?

Any directions would help! A few less plants in the house would be nice.

Oh, I've never been successful at beating zone limits. Like the Sweet Olive, it never made it when I tried.
