Kaempferias do go dormant in the winter. I am not sure how to store them as mine are in ground here in central Florida.

I have kaempferia 'Grande' and I store it fairly dry in its pot in the garage in the winter. It goes completely dormant. I have given it tiny drinks every now and again- but you do not want to do this often, especially if it is cool. In early summer of late spring (depending where you live) take it out and put in indirect sun and give it a drink.
