I don't know much about white sapote, but the one I have (an SES2) is diminutive in size, not dwarf but more likely to do well in a pot than others which you already know get large.

Also they don't like a lot of water. Mine is in the ground and has died back many times, I'm about to give it the axe. Maybe an SES2 will do good in a pot where water can be controlled?

They will grow in very large pots. I had mine in a 36 gallon pot,it would put out small fruit. It did fill that pot solid with roots. I would water heavily and fertilize consistently.
The advantage with them,is that they can take more cold and dry (if you forget to water) then most of the rare fruits here in California.
With a drip in the largest pot you can fit in your yard,they might look and bare well.

Mine also like water. I have one that is about 8 years old, and with pruning, the plant is only about 7 feet tall. White sapote roots spread outwards, so perhaps treating it like a bonsai (if you want to pot culture) by removing it from the pot once every year or so, and trimming the roots to match the canopy, could help you on this new endeavour. (?)
