Seedlings will be genetic crap shoots but that's not always a bad thing, obviously, since that's how new good varieties are often discovered.

But....the wait can be long--maybe as long as 10 years. Many people who use seedlings as rootstocks for grafting let at least one low branch from the seedling develop once the scion has taken off. That way--someday--you will get the chance to see if you have hit the jackpot and have something new worth propagating.

many people will tell you that you'll never know what you'll get, but I'm willing to bet the fruit probably won't be far off from the parent, unless you have an interspecies hybrid. If you cross two lions, you won't get a rabbit, so to speak. But are you willing to wait? Do some research on how long it takes for a certain tree to fruit from seed. I wouldn't hold out for anything more than 5 years, unless it had landscape value, ie. a beautiful, hardy shade tree.

Some people wait for a seedling to fruit, get rocks instead, and decide to burn the tree. If you're one of those people, then don't bother planting seeds.

But it's the roots that hold the most value, so it's very worth it to plant those seeds and get a good rootstock. grafting seems intimidating if you've never done it, but it's not that hard. At least plant some for practice.

Forgot to add that seedlings tend to grow larger and faster--perhaps not a good thing with sapotes which can get to be HUGE by anyone's definition. Grafting tends to make for smaller and a little less vigorous trees.
