In CA I had ice plant, but can't remember the exact name~~since iceplants are succulents, they don't require a lot of water and definitley keep soil from eroding. I would *think* this type of plant would do as well in TX as it does in CA since it's a succulent. ;o)

What kind of slope are you looking at? Is it such that you could terrace the slope and have multiple beds?

Rocks and succulents, silver ponyfoot, weeping muhly, any plant the spead by stonlons like palm leaf butterfly weed, Or EUpatorium gregii, bunch grasses will send deep roots and help in the stabilizing
