| Are the fruits of the Wild Olive trees edible?
And if they are, How would you process them? I've asked a few people around here,

I don't think so. My aunt had a huge one and she never did anything with the fruit. This was a working farm in the valley and she canned anything she could.

Yes, the fruits of Cordia boissieri are edible but slightly toxic when fresh, causing dizziness. Jellies made from the fruit are supposedly safer to eat. They also have medicinal uses.

Thank you both for the replies. I kind of figured that. Sure was hoping to find they could be turned into olives. They really do look like they could be! Now I'm curious as to what jelly made from them, Would taste like. Rusty

In Asia, the immature fruits of related Cordia species are eaten pickled, much like olives. If you are feeling adventurous, I think pickled C. boissieri fruits are worth investigating.
