Vitex and Copper Canyon daisy..............also, most Gregii salvias.

Rosemary, mexican oregano, most spices, dill, many texas natives, bamboo muhley, most muhly grasses, agarita, artemisia, sedum palmerii,iris,monarda, Yucca (but they like the bloom stalks so I buy my tall yuccas large ands then they can't get to them. Same with hesperaloe. Get the giant hesperaloe funiera ssp. chiangii. They do like the bloom stalks but the plant gets so large and pokey they can't get to it. agave are deer proof., I have found that if you hide plants they like (ie echenacia) in amongst the mix of salvias, you will have a better chance at seeing flowers. Other non palatable plants are fire acanthus, texas betony. Basically plants that have strong smells to the foliage are a turn off. But if they are hungry, nothing is safe. Fences need to be 7'. I have 6' fence and they have gotten over it into my vegetable garden. I am in the process of building a structure on the top that is not too unsightly. They love winecups, damn it. My other strategy is to plant so many that they might miss some.

Fences work. 6-foot fences do okay here, but maybe we just have shorter deer? 7-foot is ideal, I'd agree with that. Actually, I suspect that the deer here have more fear of people than in many other places...I know that somebody out here in our country area hunts them...just can't prove it.
Here's one deer resistant plant list below. I think the value of having these kind of plants is the hope that the deer won't find your yard appealing enough to stay long and will go eat the neighbor's more edible plants instead. I'd skip the oleanders. That stuff is just WAY too toxic!

You can use a shorter fence if the garden is narrow because they don't have space to jump. Wire wrapped on stakes keeps them away from favorite plants, tomato cages help too. Electric fence wire works.

My deer are airplanes, no helicopters. They do not seem to need a running start. I have been piling conduit on top of my fences. One section was knocked down this morning.They must have college degrees because wire wrapped around stakes don't fool them. The wire needs to be the kind where the grid is 4" X 2". They will stick their heads and nibble through the 4" X 4".
