Purple Hull Pea experiment

Lynn Marie

I've only ever seen purple hull peas sold fresh or frozen, never dried like red beans or black eyed peas. Have you?

Well, it seemed reasonable that they would store longer and cook up just fine if they were dried, so I gave it a try. Since I only have a tiny bed with 4 purple hull pea plants, I have to save up my harvest to get enough to cook.

That's fine, my family doesn't want them every day anyway. So every day I pull between 5 and 15 pods and set them out on a paper plate on the patio to dry.

After a few days, they are all dried out and super easy to shell. I toss the shells in a nearby bed and store the peas in a sandwich bag with a couple of those de-moisturizer packet thingies. Today DH cooked them up in the crock pot and they were as good as fresh! Much easier, stores well, tastes great!
