I would get started with some things that do well in our winters. I haven't done much myself through the winter but I've read that :

lettuce, broccoli, spinach, and things like that do well here over the winter. I've had swiss chard winter over. It didn't grow much during the winter but come spring it jumps into life.

I would like to get those seeds all started now but don't know if I will be able to, it may be too late to start them.
Give it a try. You're not losing much if they fail and gaining a lot if they take off for you.

You could try cuttings now, and see what happens. I usually do my cuttings in the spring but some people do it in the fall for certain things.

You will have to monitor the temps inside on our mild winter days and perhaps vent your hoop house often to keep things from getting too hot.

Good luck! I hope your hoop house produces well for you this winter. If you can get things up and growing soon I see no reason for them not to thrive for you.

I wouldn't do anything that is tender unless you are prepared to try to protect them in our dead of winter ice and snow storms.

I think as far as fall planting your winter items, now should still be a good time seeing as how you're in East Tx, which tends to be a bit milder than North Tx where I am. I've read that cabbage and kale are good things to plant now and that pansies will stay in bloom most of the fall/winter. You're likely lucky enough to have the kind of acid soil that I've read is common in East Tx that is perfectly suited for camellias and gardenias. These gorgeous shrubs suffer in North Tx so idk that I'll ever grow them myself but camellias are beautiful winter flowering shrubs!
