Leggy kale and cabbage.

I got a "deal" on a number of flats of flowering kale and cabbage plants. They are healthy and I am going to transplant them to pots to continue growing until it is time to remove the annuals from a raised bed and make an autumn garden with them. All of the "heads" have lost bottom leaves and are now very leggy--maybe 2 or 3 inches. Can I plant them so that the dirt comes up to the bottom of the heads? Will the leggy stems rot or put out roots?
