Need Urgent Advice from UT Tropicalesque Gardeners

I am attempting my first tropical bed this year. I have already prepared the approximately 100 SF bed by ammending compost, peat moss, sand and manure into it.

I ordered several different plants to add, but my urgent question is about the Colocasias (Black Elephant Ear) it arrived in a pot today. It has about 6-12 inches of growth.

I am not sure if it is ok to plant it now or if I should wait and wait until when? I am in Salt Lake Valley and as you know it has been in the low 60's here lately but will likely snow several times before it warms up completely.

Please advise what I should do, and if I should not plant it now, what should I do with it?
