How deep can you go?

My farm is about 3 inches deep. It is less than a year old, and I think I already have overcrowding. I use a Rubbermaid bin that is 22" by 14", When I put new food in, every scoop is a tangled mass of worms. They must be procreating like crazy. I started out with 2 dozen red wigglers from the bait shop.

Can I scoop out a row across about 5 " wide and place the removed material on top of the other material? I would then fill in that missing 5" gap with new bedding material and food. Do you think that would make the material too deep for the worms? I don't want to add too much weight on top of the worms that are already in the existing part. How deep is an average bed? Thank you for any suggestions you may have.
