Is coir considered part of your carbon additive for your bin? And how wet should the bin be?

Coir is carbon.

The conventional wisdom is that the bedding should be damp, like a wrung out sponge. Having the bedding a little wetter won't hurt the worms, as long as air is able to flow through the bedding.
