Container size: The general rule of thumb is one square foot of surface for every person in the household.

Servicing a flow through system: Generally, you remove compost from the bottom every time you feed. Even with your system, you will still need to spread the food out over the surface of the bin, and you will need to add bedding periodically, which you may not want to dump down the chute. You may be able to service less often, but if you pull too much compost out at once, you may be pulling cocoons and baby worms out with the compost.

Garbage disposal: A garbage disposal requires water to be run down it to flush the ground food out of it. That much water being poured into your worm bin would not be beneficial to the bin.

I don't see the chute saving you a lot of time. You will still be going out to the bin a few times a week to spread out the food, add bedding and remove finished vermicompost.

I pay attention to the bottom of my flow through only when I need some. That's been 3 times in the last 9 months. ("Lucky you live Hawaii!") I figure the longer stuff stays there, the better quality it will be and the fewer worms will be in the vermicompost harvested. I've filled the bin to the top a couple of times but it always shrinks before overflowing.

That said, for the first few weeks of my new bin, even though it was stuff dumped out from a working rubbermaid, I had worms escaping to the bottom and had to be rescued. I put some moist shredded newsprint in the bottom catchment area to keep them alive till I got to them after losing a handful. My problem was that the few pieces of newspaper that I lined the bottom with ended at the edge of bin and didn't go up the side a little. I think that would solve the common problem of settling in.

Also, I freeze all the food first to prevent fruit flies (though I still have trouble with fungus gnats.) Not doing so here is just horrible. I think a chute might add to your flying bug problems.
