Built in Compost chute

I'm tuning up some parts of my kitchen, and one of the things I was considering was adding a chute over the sink to a compost rig under and herb garden under my kitchen window. Hopefully the drawing will post so it will make sense.

Basicly, there will be a tube, say 4" diameter ABS, that has a plug inside that seals to the inside via rubber rings. The chute angles down to the composting setup. I was initially thinking regular composting, but it seems like vermiculture is best for what I want to do.

Flow Through setup seems like what I want to use.

My questions are this:

I have a family of four, we cook/eat at home about 4 days a week. Any ideas on size of container?

How often does a flow through need to be serviced from the underside?

I was thinking that it might help to feed this from a deadicated garbage disposal unit (not attached to the regular sink!). Any thoughts on this?
