I think the idea is to allow the finished level of the working tray (top tray) to be able to touch the bottom of the new tray when added. The worms can then travel up into the new feeding tray.

I wouldn't start more than one tray at a time. The risk would be to overfeed, and turn the whole thing a bit sour. Having said that, if your worms are happy and breeding like horny teenagers, then you must be doing something right! lol.

I've been running a worm factory for a couple of years now, and haven't harvested once, and still only have 2 trays in service. The level just doesn't seem to go up. However, I do only feed every 2 or 3 weeks, and then only maybe a pound of food scraps. I guess if I put my mind to it, I could juice it up a bit.

I agree with Jay. It is very risky to feed multiple trays at once. Things can go well to a certain point, then suddenly descend into a mess of mutilated worms. Give your worms time to finish processing the material before you add another tray. 3 full trays in 4 months is pretty fast unless you started with 2 or 3 lb. of worms.

You might consider starting a simple tote bin if you have more food scraps than your current system can handle. Of course you will need to start the bin with an appropriate mass of worms for the amount of food you plan to feed the new bin.
