Carlos, here's more basic vermicomposting information.

What you currently have in your bin is enough to feed a pound of worms for months. Just make sure it stays damp enough and they'll be fine. Remember that leaves and cardboard are also food.

Once your bin ecosystem is more established, you can start regularly adding food scraps. Start with small amounts and observe how quickly it gets processed. Don't worry about weighing food or worms...no one ever does that for very long and it's impossible to know how many worms you have on any given day.
