Worm composting at an elementary school questions

Hey there, I posted this earlier, but I don't think it went through. I would like to start a vermicompost project at the school where I work that would process the lunchroom waste. We have plenty of it, as well as a seemingly endless supply of cardboard. I don't know where to begin though on managing a bed of that capacity. Any tips, or resources you could direct me to so that we can get under way without too much trouble? The bed would have to be somewhat aesthetically pleasing as well, otherwise the school administrators aren't going to go for it. I can dress it up with some plants to border it or something though. I'd also like it to be something the lunchroom staff can just dump into, or something like that, so that I don't have to micromanage it. Is that a pipe dream? I'm thinking this is a bit different from my Rubbermaid classroom container. Thanks for all the advice, I truly appreciate it.
