Transplanting Muscadine Vines

These are likely VERY old and I'd imagine their roots are extensive, although I have not tried digging them up. They are bearing fruit now.

When would be (if at all) a good time to transplant them? I have a chance to get some for free from a lady and I'd love to have established ones vs cuttings.

But that brings my second, third (fiftieth ;) question, if I were to take only cuttings? or smaller sections, like suckers? that are in the ground if they exist, what's the best part to take? And how long will it take for them to mature to bear fruit?

If I successfully transplant a mother plant getting as much of it's roots as I could get, will it experience any set back from bearing fruit the next year? Should it be pruned back hard before transplanting? should I wait til it's dormant to dig it up?

Sorry for the million questions, I'd just like to do it right for the best possibly outcome.
