Growing grape vines over a pergola

I was inspired by holidays in Croatia and the way the locals use grape vines to create a delightful shady area (there, with great fat bunches of grapes hanging above you). We have built a fairly large pergola and have three vines working their way up and over it. Can anyone tell me the best way to prune them for this purpose? We can forego the grapes Â it's the cover we want.
