Those "weeds" are growing there because some soil has accumulated in those spaces and as long as there is some soil there you will have those "weeds" growing there. If it is not possible to lift up the blocks and clean the soil out, there are better, and less expensive, options than any glyphosate product. Vinegar can help some, but again growth will return unless the soil is cleaned out of the spaces. A torch could be used, with great care but agin unless the soil is cleaned out the "weeds" will return. Even boiling water could work.

Salt, boiling water, glyphosate (or other herbicide) - all will kill the weeds, but none will prevent the germination of weed seeds that find their way to the cracks. This will be a perenial problem for you. My best solution is a weed dragon, although caution should be used and always have a fire extinguisher on hand. You will get much better control of weeds growing between hard surfaces with a flame torch than most anything else.

I have heard that filling the gaps with polymeric sand may have a degree of protection, but it's expensive stuff if you've got a substantial area of interlocking brick.

If you do consider getting a Weed Dragon, get the upgraded model with the squeeze trigger handle, it gives you much better control of the flame.

Here is a link that might be useful: Weed Dragon Flame Torch
