Weeds in Former Cow Pasture

Hi, we recently moved onto an acre that used to be cow pasture and have some mystery weeds we're trying to identify. We quickly found the identity of Silver Nightshade (purple flowers and silver leaves gave it away), but have two non-flowering plants that we're stumped by.

The first is a normally short, upright, stemy plant that grows profusely everywhere. It's been here all spring and summer, has shallow roots, and hasn't seeded or flowered yet. There's pics of the normal sized plant, the leaves, and pics of one that was growing undisturbed in a irrigated area (the giant one). A neighbor thought her goat died after eating some.

The second is a slightly furry (feels soft), large weed with large leaves, no flowers yet, and strange fuzzy seed heads.

Also, do to the discovery of silver nightshade (poisonous to cows) and wild yellow indigo (also poisonous) being *everywhere* in the fields, we thought that maybe these, since they're also everywhere, might taste bad to cows. Couldn't find the plant listed under noxious weeds on livestock sites though.
