Mechele, Not a direct answer to your question as I do not live in Tennessee, but the berries go uneaten here. I don't know if you plan on having it for wildlife value, but you may want to consider a plant that animals eat more. Also, you may want to post this on a regional forum.

I planted two viburnum trilobum (cranberry bush) a few years ago in full sun - no shade at all. We have lots of days in the 90's and just a few that go over 100 each summer. The leaves burn in summer on mine but they don't look near death really. I can't recall that mine have ever wilted, they just look a little crunchy around the edges. Maybe I should've planted them where they would get some afternoon shade but then there would've been root competition. I'm not sure where they would do best. I water mine once a week or so in late summer if we don't get rain and it's hot (typical summer). They looked worst the first summer and seemed to toughen up a little after that.
They do provide food in late winter if the birds need it which is important. I think it just depends on how scarce food is for them.

Christie, Are they in a windy area? That description sounds like wind damage.

Only a hayfield to block the wind so maybe it COULD be wind rather than heat, or both. I planted v. Onondaga nearby to help pollinate them and it gets crispy looking leaves in late summer too. It's sooo pretty in the spring though. I think it's having a little more trouble adjusting than the v. trilobum. It's growing slowly and from what I've read, it's normally a fast growing shrub. This year the freak late freeze got both, but Onondaga looks the worst.
I also have two 'Shasta' viburnums that get sort of crispy. I should post photos of the leaves later this summer and see what's causing it for sure.

I'm in Virginia, the border of zones 6 and 7. I don't imagine Tenn. is much hotter. My trilobums are in full sun and seem to be thriving. I watered them their first season but they don't seem to need it now.
