What do you eat for lunch when you have no leftovers and there is JUST YOU and not much to choose from?

I'm hungry!

a sandwich, or a bowl of cereal. But today I am lucky. I have left over peter rabbit casserole. ;)

Here ya go:

Peter Rabbit Casserole

¼ c chopped onion
3 cups shredded carrots
½ c water
2 eggs beaten
2 cups cooked rice, brown or white
1 ½ c sharp cheddar cheese, shredded
½ t salt
½ t curry powder
pepper to taste

Bring onion, carrots and water to boil. Remove from heat and drain. Add eggs, rice, cheese and seasonings. Mix well. Spread into greased 10 x 6 x 2 inch baking dish. Bake about 45 minutes in 325 degree oven.

This last time I made it, there was a lady allergic to onions. I put in some cabbage instead, about a cups worth. Was pretty good that way too.

Next time, I will try it with the onions and the cabbage! :)

You guys are too late!

I started with a handful of raisins and topped it off with chips and fresh salsa (OK, it was leftover salsa)

Moni, that casserole sounds great. I'm copping saving it.

I had this problem whenever all the kids left home. After cooking for 6 kids and a Hubby how do you go about "not" fixing a lot of food? We still have a problem eating right without fixing a great big meal...its really hard to decide sometimes. I'm like Moni...usually a sandwich or a bowl of cereal if there are no leftovers to be had.

I just had some Ben and Jerry's Karamel Sutra. Yummy. Now I'm thinking of taking a nap. I just scrubbed my kitchen floor, and went out and checked the Purple Martin house. No PM's but I'd seen a (*&%*$( house sparrow setting up there acting like he had some ideas. As soon as the PM get here, those HS will be kept out. I'm sure glad I invested in a unit I can raise and lower myself. Now, I've got to get one for at the cabin.

An orange and triscuit crackers with cheese on top, microwaved a few secs to melt the cheese.

I miss a good peanut butter sandwich. Still have no selection worth carp in the stores here...

Two of my GDs were here and they wanted homemade mac and cheese, so that's what we had!

When I started gardening and the kids were moving out (and in , and out, and in) I invested in a foodsaver vaccuum sealer.
I went ahead and cooked for 4 or more, then sealed the leftovers and froze.
I was able to send my ailing in-laws and starving students care packages and can pull out a micro meal when I don't feel like cooking for 1 or 2.
Right now I probably have 3 or 4 kinds of soup, a couple of casserole dishes, a few pkgs of cooked chicken in a great mushroom sauce and some home made chili, and all I have to do is make a salad and butter a piece of bread for a great meal!
This is also great when I LIKE to cook in the winter and DON'T like to cook except for grilling in the summer!
Soup's good to hand out to sick relatives too! LOL Nancy
