Large Sage Plant

I have a huge sage plant, I have cut it bag with several bags of sage now. What are some good uses for sage and how do I keep it in a mangable state? I dont want to take it out of the garden. I just dont want it to cover the other plants.

Are we talking about regular Sage? I always cut my Sage Back right after it blooms in the late spring. I hang dry the cuttings and use them for cooking. I've found that Sage tends to be perenial for only about 4 years 5 at the most here in zone 5. So ever couple of years I make cuttings of new growth to start new plants.
